Friday, November 20, 2015 starting at 6:30pm join Chef Paul Mattison and Chef Christopher Covelli as they present the 4th Annual Wild Truffle Wine Dinner benefiting Florida Winefest & Auction and enjoy wild truffles direct from Italy! Chef Mattison and Chef Covelli will lead a discussion on the intriguing and luxurious world of wild truffles.

1. Assorted Truffle Crostini perfectly toasted and topped with a tapenade, a chic pea-white truffle fondue, and a tomato confit with white truffles, paired with a Maschio Prosecco Brut
2. Maine Lobster and Truffle Chowder classic Maine chowder cooked to perfection and served with a shrimp and bacon fritter, paired with a Fontana Candida Frascati
3. Black Truffle and Halibut Potato Croquette black truffle and pan-seared halibut with a potato croquette, served with a shallot-white wine reduction and wild mushroom ragout, paired with a San Angelo Pinot Grigio
4. Muscovy Smoked Duck Breast seared and smoked duck, served with a spicy black truffle and aged port reduction, paired with a Chianti Classico Riserva
5. Chianti Braised Short Ribs served with a saffron-white truffle aïoli and micro-greens, paired with a Brunello di Montalcino
